Shiitake and Maitake solve them in no time. This new method comes from Japan and traditional Chinese medicine. Intolerances to certain foods or food components such as wheat, pork, egg white, tomato, strawberries, yeast, gluten and so on increasingly emerge through various tests. What happens in these cases? The suggestion that is usually given is to eliminate the "offending" food to start feeling better. But that's not quite the case. And let's see why. If your intestine does not tolerate that food, it is because more generally you are not healthy. The intestinal flora is damaged, the intestinal and pancreatic juices are somewhat deficient and the intestinal walls are inflamed. And, not surprisingly, bloating, pain and constipation are very often present. Limiting yourself to eliminating that particular food simply means addressing the symptom, without actually acting on the cause. Shiitake and Maitake instead act both on the symptom and on the cause.

How can healing mushrooms help us?

Maitake eliminates intestinal inflammation with its wealth of anti-inflammatory substances which act specifically on the intestine and restore bacterial flora to full health; it also provides intestinal and pancreatic digestive enzymes. So your digestion, which was struggling to digest those foods that it tolerates less, improves markedly and food intolerance disappears. Shiitake is unsurpassed in nourishing intestinal bacterial flora, which in food intolerance are always altered due to the presence of harmful bacteria, the fermenting bacteria that cause bloating, and putrefactive bacteria, which are instead producers of toxins. Shiitake is rich in trehalose (a sugar), which greatly strengthens lactic acid bacteria, because it is their favorite nourishment. It is rich in beta-glucans, which are powerful immunostimulants and eliminate hostile intestinal bacteria. With its fibres, it gently massages parts of the intestine. That's why Shiitake protects the intestine in an excellent way.

An infallible diet for food intolerance

They are not allergies. In allergies, a minimal, even infinitesimal, amount of substance to which you are allergic is sufficient to trigger real allergic reactions, with urticaria or respiratory reactions similar to asthma. In intolerances, consuming normal quantities of poorly tolerated food creates problems. Secondly, the real cause of intolerance is the intestine, which, being inflamed, does not work brilliantly in general even when we eat other foods. So our whole way of eating must be reviewed and corrected, because much of what arrives on the table, such as cheese, meat, bread and pasta cannot be considered a source of health. In my latest book "Healing with Medicinal Mushrooms" there is a chapter entitled "the infallible diet", which explains how limiting one’s diet to mostly just fruit, vegetables, legumes and oil seeds can get rid of food intolerances. Small quantities of fish, eggs and cereals can also be added. If we want to tackle food intolerances, we should look more at China and Japan where, with such eating habits and the daily use of Shiitake and Maitake, they are almost unknown.
